Kalmyk cuisine is the traditional food culture of a nomadic people, where the main ingredients are milk and, typically, boiled or fried meat. Mutton fat is used for frying, and sauces or seasonings are rarely employed. Other popular dishes include borzog — flatbreads fried in mutton fat, and beriki — large dumplings made from hand-chopped meat. One cannot overlook jomba, the famous Kalmyk tea, made not only with tea leaves but also with milk, butter or mutton fat, pepper, bay leaves, and other aromatic spices.
