Bashkir cuisine
Bashkir dishes are notable for their minimal use of traditional spices — only black and red pepper are used. Another characteristic feature of Bashkir cuisine is the abundance of meat in both hot dishes and appetizers. The Bashkirs’ love for horse sausage kazy and horse fat deserves special mention: they enjoy eating horse meat with thick slices of fat, washing it down with broth mixed with sour ҡорот (a fermented dairy product), which helps neutralize the effects of such a high fat content.
The nomadic lifestyle led to the development of a wide variety of foods suitable for long-term storage. The core of Bashkir national cuisine consists of boiled, dried, and cured horse meat and mutton, dairy products, dried berries, grains, and honey. Examples include kazy (horse sausage), kaqlangan it (cured meat), pastila, kumys (fermented mare’s milk), seyäle hary may (cherries in clarified butter), muyıl mayı (bird cherry butter), ҡорот (dried curd), eremsek (cottage cheese), and ayran (a yogurt-like drink). All of these foods keep well even in the summer heat and are convenient to take on the road. It is believed that kumys was traditionally prepared during travel — a vessel of mare’s milk was tied to the saddle and shaken throughout the day.

Bishbarmak

A meat-and-noodle dish, traditionally prepared for family celebrations or to honor special guests.

Bashkirs traditionally made bishbarmak using mutton or horse meat, always cooked on the bone. Sometimes several types of meat were used together, including veal and goose. The meat, cut into pieces, was placed in a cauldron with cold water and brought to a boil. After skimming off the foam, the cauldron was covered and the meat was simmered over low heat for 2–2.5 hours. Toward the end of cooking, the top layer of broth was ladled off and reserved to pour over the noodles later.

Once cooked, the meat was allowed to cool slightly and then sliced into smaller pieces. The dish could also include sliced horse sausage, fresh or semi-dried horse intestines, and the fat taken from the horse’s neck.

For the noodles (salma, see), a stiff egg dough was used, rolled out and cut into small diamonds or squares. The noodles were boiled in a small amount of broth or water, then seasoned with broth fat (or butter) and combined with the prepared meat portion of the dish.
